This super vegan recipe was inspired by Gaz Oakley's amazing KFC fried chikken recipe which you can find here: https://www.avantgardevegan.com/recip... This recipe is very versatile. You can go right down the middle and nail the spices or you can modify them with ingredients you already have. Chikken seitan - ingredients and method: Wet ingredients: 1 cup of tofu 1/2 cup your favorite non-dairy milk 1 tsp of miso 1 tsp dry tarragon 1 tsp dry sage 1 tsp onion powder 1 tsp of sea salt Dry ingredients: 1 cup of vital wheat gluten 1/4 chickpea flour Broth: 4 cups of vegetable stock 1 sprig of rosemary 2 sprigs of thyme 1/2 of a large onion quartered a dash of salt and pepper Method: Heat up the broth to a simmer then add the broth ingredients. Add all wet ingredients to a blender or food processor. Blend until smooth. Mix dry ingredients in a large bowl then add the blended wet ingredients. Mix well until the dough forms. Knead for at least 7 to 8 minutes. You really want to end up with a firm dough. Cut the seitan into 6 equal pieces and roll into a ball shape. Flatten each piece by hand until get a nice shape that appeals to you. Drop each piece into the simmering broth. A word of caution; if you're broth is a boiling monster back down the heat. If the broth is too hot the seitan pieces will enlarge dramatically and become gloopy sponges of disappointment. You want a gentle simmer. After 25 minutes your seitan should be ready. Remove from the broth and let them cool on a plate. You can now use the tasty seitan however you wish. I prefer to use this recipe for deep fried strips or pasta dishes.
